Grassfed and finished animals reflect the terroir of the land in much the same way as a bottle of fine wine. Wine takes up the characteristics of the soil from which the grapes were raised, just as our variety of forages dictate the taste in our beef. Our 100% grass-fed beef is finished on a diverse mix of annual and perennial grasses, legumes, and forbs that provide a complete nutrient profile to impart a full, yet unique and satisfying flavor. We breed Black Angus Cattle, a very popular breed of beef cattle throughout the world, known for the high-quality beef they produce with terrific fat marbling and flavor characteristics.

To achieve the best tasting grape, farmers must harvest them at the proper time so that it is rich in flavor but not yet spoiled. Our grass-fed beef also has a similar optimal harvest window. We take special care to analyze and work with the lifecycle of our cattle so that they finish growing when nature supports it. We finish our animals during the longest days of the year, when the sun stays up the longest and the forage has the highest sugar content. This leads to meat with a high level of intramuscular marbling, a fat cover to lock in the moisture, and a flavor that makes our grass-fed beef especially delicious. We stress the importance of properly finishing our cattle on natural grasses, rather than grain or other feed. Although this process involves a complex puzzle of timing herd movements across our paddocks, our efforts are rewarded in the taste of our meat and the health of our land.
