Cumin-Spiced Beet Salad with Yogurt and Preserved Lemon

WOW- This recipe from Lindsay at really blew our minds! We eat a ton of beets at the farm and so we are always looking for ways to spice it up. This recipe is perfect for the middle of winter- it is bright and tangy and makes you feel like it is summer already. Enjoy!
