Delicatas are one of the simplest winter squashes to cook. They are smaller than most winter squashes, have a thinner, edible skin, and hardly need any seasoning to taste delicious. They also cook up super fast, making this a perfect dish to cook when you are pressed for time. This recipe can be prepped and baked in about 30 minutes.
Ingredients:
-Delicata squash
-Olive oil
-Cinnamon
-Salt & pepper to taste
Instructions:
-Cut delicatas lengthwise and scoop out all the seeds*
--Slice the halves horizontally to create "half moon" shaped bites
-Toss in oil & seasonings
-Spread out on a baking tray and bake at 400 degrees for about 20 minutes
-Enjoy!
*The seeds can be washed and baked for a simple, high protein snack. Toss in oil, salt and pepper and bake.
Other great spices you could add include nutmeg, clove, paprika, allspice and brown sugar.
