Sweet Potato & Ground Beef Bowls with Hot Honey
Serves 4
Ingredients:
- 2 tbsp olive oil, divided
- 2 sweet potatoes, peeled and diced
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 lb lean ground beef (or ground chicken or turkey — all available from Caney Fork Farms)
- 1 packet taco seasoning (or about 3 tbsp)
- 2 cups cottage cheese
- 1 to 2 avocados, sliced
- 1/4 of a white onion, finely diced
- 1/2 to 1 cup chopped cilantro
- Lime wedges for serving

Instructions:
Roast your sweet potatoes
Pick your method: air fryer or oven.
- Air fryer: Preheat to 400°F. In a medium bowl, toss diced sweet potatoes with 1 tbsp olive oil, garlic powder, onion powder, paprika, salt, and pepper. Add to your air fryer basket and cook for 12 to 15 minutes, giving them a good shake halfway through. They’re ready when fork-tender and a little crispy on the edges.
- Oven: Preheat to 425°F. Toss the potatoes with the same olive oil and seasonings as above, then spread them out on a parchment-lined or greased baking sheet. Roast for 25 to 35 minutes, flipping once, until caramelized and cooked through.
Cook the beef
While the potatoes are cooking, heat 1 tbsp olive oil in a skillet over medium heat. Add your ground beef and taco seasoning. Break it up with a spatula and cook until browned and no longer pink, about 7 to 10 minutes. If using a leaner protein like ground turkey, cook until fully done and juicy.
Assemble your bowls
Scoop 1/4 of the cooked ground beef into each bowl. Add 1/4 of the roasted sweet potatoes, 1/2 cup cottage cheese, and 1/4 to 1/2 an avocado. Sprinkle over your chopped cilantro and finely diced raw onion. Give everything a big squeeze of lime. Then drizzle generously with hot honey and a pinch of red pepper flakes if you like a little extra kick.
