Miso Butter Glazed Carrots

Lauren Worthey over @nashgirleats used the carrots and green onions from her Caney Fork Farms veggie CSA to make this delicious side. She used an air fryer, but I imagine you could roast the carrots in the oven instead if you do not have access to an airfryer. I like to roast at 400 F for 35-40 minutes, then set the oven to broil at the end to get a little bit of that charred flavor.




1 lb Caney Fork Farms organic Carrots

1 tbps Olive Oil





1 tbsp butter

1 garlic clove, minced

2 green onions, minced

1 tbsp white miso

1/4 cup white wine

1/4 cup rice vinegar


Directions: toss 1lb. carrots with 1 TBSP olive oil, plenty of salt and pepper. Place in air fryer on high setting for 10-12 minutes until roasted through and with desired color. Meanwhile, finely mince 1 clove garlic, slice 2 green onions. Heat 1 TBSP butter in small skillet, add onion and garlic, cook for 2 minutes. Add 1 TBSP white miso, 1/4 cup white wine, scant 1/4 cup rice vinegar and whisk until combined. Remove carrots from fryer and toss with dressing.
